So my grand plan to share our menu plan on Sunday....has already failed...but just for a moment...let's pretend it's still Sunday!!:) Last weeks meals were all hits!! A favorite was the Slow Cooker Creamy Italian Chicken....it tasted alot like chicken and noodles but with a little flair!! The Crockpot French Dip Sandwiches were also a fun meal...I ended up put the meat into cook before bed on Friday night and we had a perfect meal ready for us for lunch the next day...it even got 2 thumbs up from my father-in-law!!
This weeks Menu:
Monday: Slow Cooker BBQ Pulled Pork Roast....all my kiddos loved this...and in Sophia's words..."mommy you added the perfect amount of flavor!!"
Tuesday: Meatloaf and Maple Mashed Sweet Potatoes
Wednesday: Wacky Wednesday..Breakfast for dinner
Thursday: Asian Marinated Flank Steak and Roasted Veggies
Friday: Spaghetti and Meatballs (at my hubby's request) I need to pay attention to what I put in my sauce so I can share!!:)
Saturday: Stirfry (recipe below)
Sunday: Leftovers
A Little Breakfast treat: Banana Blueberry Muffins!! YUMMY!!
Stir Fry ----The Best you'll ever have!!:)
1. Pick a Protein:
We prefer steak
2. Marinate:
Whisk 1 egg white, 1 tbsp Chinese Rice Wine or dry Sherry and 1 tbsp Cornstarch. Toss with your protein, cover and refrigerate for 1 hour.
3. Pick your veggies:
We prefer,
Asparagus
baby spinach
zucchini
red pepper
red onions
water chestnuts
4. Sauce:
Mix 1/2 cup chicken broth
1 tbsp cornstarch
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp Chinese rice wine or dry Sherry
5. Stirfry
* drain the excess marinade from protein, place your sauce, veggies and protein near stove.
* Heat 1/4 inch oil in a wok or skillet over medium heat. Add the protein; slowly and cook until done. Transfer to a plate; discard the oil and wipe out pan.
* Heat the pan over high heat, 1 to 2 minutes, add 2 tbsp oil, then 2 cloves of garlic and 2 minced scallions and a pinch each of salt and sugar, stirfry about 30 seconds. Add the veggie, starting with the ones that take the longest to cook; stirfry until crisp and tender.
* Add protein and sauce and stir until the sauce is thick about 3 minutes.
We serve this with brown rice...it is one of our FAVORITE meals!!
