Aww...I guess with the end of Spring Break...I should get this little blog caught back up...starting with our menu. Last week was a free for all....which was nice for a change..but I'm grateful to be back on a schedule!:) Sorry no pictures!!:)
Monday: Burger on the Grill and Sweet Potato Fries (a perfect ending to a PERFECTLY beautiful day!!)
Tuesday: Chicken Stroganoff (recipe below)
Wednesday: Ginger Pineapple Chicken, Stir fry veggies and brown rice
Thursday: Chicken Breasts on the Grill and grilled veggies
Friday: Garlic Shrimp and Scallops Pasta
Saturday: Mexican
Sunday: FREE :)
Chicken Stroganoff
(easiest Recipe ever...and my kids all LOVE it!!:)
1 Rotisserie Chicken
2 can of Cream of chicken Soup
1 8oz Sour Cream
1 tsp Parsley
1 pkg Egg noodles
Tear chicken into small bite size pieces
In a sauce pan add both cans of Cream of Chicken Soup
Stir in Sour Cream and parsley
Add chicken and heat thru.
Serve over Egg noodles.
We like to serve this with fresh cooked carrots!!:)
This is also perfect when you substitute 1 lb of hamburger for the chicken!!
